This Cucumber Ribbon Salad is particularly good with grilled salmon and sesame scented noodles. I have served it many times as part of a starter at any number of dinner parties.

Tip : Make sure that you use toasted sesame seed oil, otherwise you will not get either the aroma or flavor of sesame seeds.

Ingredients 

  • 1 English cucumber
  • 1/4 cup chopped scallions or finely chopped shallots

Dressing

  • 1/4 cup Seasoned Japanese Rice Vinegar
  • 1 tbsp Asian toasted sesame oil
  • 1 tbsp sesame seeds
  • 2 tbsp grated ginger
  • 1 pinch sugar

Instructions

  • Gather all ingredients before starting recipe.

Dressing

  • Place all dressing ingredients in a jar with a lid and shake well to combine.
  • Cut ribbons from unpeeled English cucumber with potato peeler and place cucumber in a bowl.
  • Pour dressing over cucumber ribbons, salt and refrigerate for 15 minutes to 1 hour.
