Spring Onion, Ricotta and Breakfast Egg Pizza

Tip : It is actually faster to fry the eggs in a skillet while you are baking the pizza and then just top each slice with a sunny side up egg

Ingredients 

  • 1 naan bread
  • 2 whole eggs
  • 1 bunch scallions or asparagus sliced in half horizontally
  • 2/3 cup ricotta cheese
  • 2 tbsp parmesan cheese
  • kosher salt and ground black pepper
  • 2 tspn olive oil to drizzle

Instructions

  • Gather all ingredients before starting recipe.
  • Pre heat oven to 375°F.
  • Mix ricotta with 1 teaspoon of salt and coarsely ground black pepper.
  • Spread ricotta mixture on naan. Make a slight indentation in the cheese for each egg. Spread sliced spring onion on the cheese. Lightly drizzle with olive oil.
  • Bake in a pre heated oven for 8-10 minutes, or until the asparagus or scallions begin to brown, remove from oven.
  • Break an egg in each of the wells in the cheese made earlier. Season with salt and black pepper and return to the oven. Switch the position of the pizza to the upper rack and turn the oven to broil. Keep an eye on the pizza, when the egg whites turn white, remove the pizza from the oven and allow to cool for about 2-3 minutes.
